Ingredients
  

Chicken :

  • 2 boneless skinless chicken breasts or thighs

Glaze :

  • 2 tbsp Dijon mustard 3 tbsp honey, 2 tbsp apple cider vinegar

Apples :

  • 2 tart apples e.g., Granny Smith

Pan Base :

  • 1 tbsp vegetable oil 2 tbsp butter

Aromatics :

  • 1 sprig fresh thyme or ½ tsp dried

Liquid :

  • 150 ml ⅔ cup chicken broth

Instructions
 

Prep :

  • Whisk glaze ingredients. Season chicken and brush with glaze. Core and slice apples.

Sear Chicken :

  • Heat oil in an oven-safe skillet. Sauté chicken for 3–4 mins/side until golden. Remove.

Caramelize Apples:

  • Melt butter, cook apples and thyme for 4–5 mins until softened.

Bake :

  • Return chicken to pan. Add broth and bake at 180°C (356°F) for 20–25 mins. Baste juices halfway.

Serve :

  • Plate with sauce, herbs, and sides like rice or bread.
