Ingredients
  

For the Chicken:

  • 2 lbs chicken breasts butterflied and pounded thin
  • 1 tsp salt
  • 1 tsp granulated onion powder
  • 1 tsp granulated garlic powder
  • 1 tsp Italian herb blend
  • ½ tsp cracked black pepper

Dredge Mixture:

  • ½ cup all-purpose flour or almond flour for gluten-free
  • 1 tsp granulated onion powder
  • 1 tsp granulated garlic powder
  • ½ tsp salt
  • ½ tsp cracked black pepper

Sauce & Aromatics:

  • 3 Tbsp unsalted butter
  • 2 Tbsp cooking oil
  • ¼ cup finely diced onion
  • 3 cloves garlic minced
  • ¼ –½ tsp crushed red pepper flakes adjust to taste
  • 1 cup low-sodium chicken broth
  • 1 –1½ cups heavy whipping cream or coconut cream for dairy-free
  • cup grated parmesan cheese or nutritional yeast for vegan
  • 4 oz sun-dried tomatoes chopped
  • 5 –6 large fresh basil leaves chiffonade for garnish
  • Salt to taste

Instructions
 

Prep the Chicken:

  • Butterfly the chicken breasts and pound them to an even thickness (about ½ inch).
  • Season both sides with salt, pepper, onion powder, garlic powder, and Italian herbs.
  • Dredge each piece in the flour mixture, shaking off excess.

Sear the Chicken:

  • Heat butter and oil in a large skillet over medium-high heat.
  • Sear the chicken for 3–4 minutes per side until golden-brown. Remove and set aside.

Build the Sauce:

  • In the same skillet, sauté diced onion, garlic, and red pepper flakes for 1–2 minutes until fragrant.
  • Deglaze the pan with chicken broth, scraping up browned bits.
  • Stir in heavy cream, parmesan, and sun-dried tomatoes. Simmer for 5–7 minutes until thickened. Taste and adjust seasoning.

Finish the Dish:

  • Return the chicken to the skillet, spooning the sauce over the top.
  • Garnish with fresh basil and serve hot.
