For the Cake:
- 1 box lemon cake mix
- 1 3.4 oz box instant lemon pudding
- 3 eggs beaten
- ½ to ¾ cup oil
- 12 oz Sundrop soda
- 1 tsp vanilla extract
For the Glaze:
- 1 cup powdered sugar
- 1 tbsp water or milk, half & half, or heavy cream
- Dash of vanilla extract
Preheat the Oven : Set your oven to 350°F (175°C).
Prepare the Pan : Grease a Bundt pan with butter or cooking spray. Optionally, dust with flour for extra non-stick insurance.
Mix Dry Ingredients : In a large bowl, combine the lemon cake mix and instant lemon pudding.
Add Wet Ingredients : Add the eggs, oil, Sundrop soda, and vanilla extract to the dry ingredients. Mix on low speed until combined, then increase to medium speed and beat for 1.5 to 2 minutes until the batter is smooth and slightly thickened.
