For the Coffee Soak :
- 2.5 tablespoons instant coffee
- 1/1.5 cups hot water
- 2 tablespoons sugar
For the Creamy Layer :
- 200 ml chilled whipping cream
- ½ cup sugar approximately 100g
- 250 g mascarpone cheese
- 1 teaspoon vanilla essence
For Assembly :
- 18 –20 ladyfinger cookies
- Cocoa powder or chocolate shavings optional, for garnish
Prepare the Coffee Soak :
In a small bowl, dissolve 2.5 tablespoons of instant coffee in 1/1.5 cups of hot water.
Stir in 2 tablespoons of sugar and let the mixture cool slightly.
Whip the Creamy Layer :
In a large mixing bowl, whip 200ml of chilled whipping cream until soft peaks form.
Gradually add ½ cup of sugar and continue whipping until stiff peaks form.
Gently fold in 250g of mascarpone cheese and 1 teaspoon of vanilla essence until smooth and creamy.
Assemble the Dessert :
Quickly dip each ladyfinger cookie into the coffee mixture (do not oversoak).
Arrange a layer of soaked ladyfingers at the bottom of a 5" x 9" pan.
Spread half of the creamy mascarpone mixture evenly over the cookies.
Repeat with another layer of coffee-soaked ladyfingers and the remaining mascarpone mixture.
