Ingredients

  • 1 lb top blade steak cut into thin slices or left whole, depending on preference
  • 2 tbsp olive oil or your favorite cooking oil
  • Salt and freshly ground black pepper to taste

For the Marinade:

  • 3 tbsp soy sauce for savory umami flavor
  • 2 tbsp Worcestershire sauce adds depth and richness
  • 2 cloves garlic minced (for aromatic goodness)
  • 1 tbsp honey or brown sugar a touch of sweetness to balance flavors
  • 1 tsp smoked paprika optional, for a smoky twist
  • 1 tbsp apple cider vinegar or lemon juice brightens up the marinade

Instructions

Marinate the Steak :

  • In a bowl, whisk together soy sauce, Worcestershire sauce, minced garlic, honey, smoked paprika, and apple cider vinegar.
  • Place the steak in a resealable plastic bag or shallow dish and pour the marinade over it. Ensure the steak is evenly coated.
  • Cover or seal and let it marinate in the refrigerator for at least 30 minutes (or up to 4 hours for deeper flavor).

Prepare for Cooking :

  • Remove the steak from the marinade, letting excess drip off. Pat it dry with paper towels to ensure a good sear.
  • Season lightly with salt and pepper on both sides.

Cook the Steak :

  • Heat 1-2 tablespoons of oil in a heavy skillet (stainless steel or cast iron) over medium-high heat until shimmering.
  • Add the steak to the pan, laying it away from you to avoid splatters. Sear undisturbed for 3-4 minutes on the first side for a golden-brown crust.
  • Flip the steak and cook for another 3-4 minutes for medium-rare, or adjust based on your preferred doneness. For thin-sliced steak, reduce cooking time to about 2 minutes per side.

Rest and Serve :

  • Transfer the steak to a cutting board and let it rest for 5 minutes to lock in juices.
  • Slice against the grain for maximum tenderness and serve immediately.
